DAMA TOP 1 kg IRCA sugar paste for covering plastic icing

TheDAMA TOP sugar paste from the Italian company Irca is a ready-made paste with increased elasticity that allows a large area of the cake to be covered with a fairly thin layer of white icing. The colour of the mass can be changed by adding gel colours. Thanks to the vegetable fat content the paste does not crack or crumble when covered.

Use: Gently knead the mixture with your hands and spread it on a baking tray dusted with icing sugar or on a silicone mat. Roll out the mixture into a larger cake (so that it also covers the sides of the cake - an overlap of approx. 15 cm). Then, using a rolling pin or on a mat, transfer the paste onto the cake (for good adhesion, place the sugar paste onto a cake covered with buttercream). When covering the cake with the paste, always start by spreading the paste evenly and sticking it carefully to the surface, then gradually cover the sides of the cake from the top edge downwards, so that there is no air under the paste. Line the top and sides with a pastry trowel, then press the bottom edge against the base and cut off the remaining paste. It is best to glue the decorations to the paste using food glue or a little water. The paste can be painted with gel colours, airbrush or powder colours.
